يهدف هذا الكتاب إلى تعريف القارئ على الكربوهيدرات البروتينات، الزيوت والدهون، الألوان في الأغذية والمواد المضافة حيث يتم التعريف على التركيب الكيميائي والتفاعلات الكيميائية والحيوية والتفاعلات الإنزيمية وغير الإنزيمية التي تحدث في الأغذية وتأثير عمليات التصنيع الغذائي على هذه التفاعلات. حيث جاء هذا الكتاب بخمسة فصول رئيسة تناول الفصل الأول منها الكربوهيدرات، أما الثاني فقد تناول البروتينات فيما جاءت الوحدة الثالثة اللبيدات الشحوم، الدهون، الزيوت، الوحدة الرابعة الألوان في الأغذية، وأخيرا جاءت الوحدة الخامسة تناولتا المواد المضافة والنكهات والمواد المسارعة في النكهة.
