Olea europaea L. fruit is a peculiar vegetal matrix containing high levels of fatty acids (98–99% of the total weight of extra-virgin olive oil, EVOO) and low quantities (1–2%) of phenolics, phytosterols, tocopherols, and squalene. Among these minor components, phenolics are relevant molecules for human health. This review is focused on their beneficial activity, in particular of hydroxytyrosol (HT), oleuropein (OLE), oleocanthal (OLC), and lignans found in EVOO, olive oil by-products and leaves. Specifically, the cardioprotective properties of the Mediterranean diet (MD) related to olive oil consumption, and the biological activities of polyphenols recovered from olive oil by-products and leaves were described. Recent European projects such as EPIC (European Prospective Investigation into Cancer and Nutrition) and EPICOR (long-term follow-up of antithrombotic management patterns in acute coronary syndrome patients) have demonstrated the functional and preventive activities of EVOO showing the relation both between cancer and nutrition and between consumption of EVOO, vegetables, and fruit and the incidence of coronary heart disease. The data reported in this review demonstrate that EVOO, one of the pillars of the MD, is the main product of Olea europaea L. fruits; leaves and by-products are secondary but precious products from which bioactive compounds can be recovered by green technologies and reused for food, agronomic, nutraceutical, and biomedical applications according to the circular economy strategy.

Onion is widely used worldwide in various forms for both food and medicinal applications, thanks to its high content of phytonutrients, such as flavonoids and volatile sulfur compounds. Fresh onion is very perishable and drying is widely applied for extending shelf-life, thus obtaining a very easy-to-use functional food ingredient. The flavonoid and volatile fractions of different onion cuts (flakes, rings) prepared through different drying cycles in a static oven, were characterized by high-performance liquid chromatography with a diode-array detector HPLC-DAD, Head Space-Solid Phase Micro Extraction followed by Gas Chromatography coupled with Mass Spectrometry (HS-SPME-GC-MS) and Head-Space Solid Phase Micro Extraction followed by comprehensive two-dimensional Gas-Chromatography (HS-SPME-GC×GC-TOF). Onion flakes showed a significantly higher flavonoid content (3.56 mg g−1) than onion rings (2.04 mg g−1). Onion flakes showed greater amount of volatile organic compounds (VOCs) (127.26 mg g−1) than onion rings (42.79 mg g−1), with different relative amounts of di- and trisulfides—disulfides largely predominate the volatile fraction (amounts over 60% on the total volatile content), followed by trisulfides and dipropyl disulfide and dipropyl trisulfide were the most abundant VOCs. HS-SPME-GC×GC-TOF allowed for the detection of the presence of allylthiol, diethanol sulfide, 4,6-diethyl1,2,3,5-tetrathiolane, not detected by HS-SPME-GC-MS, and provided a fast and direct visualization and comparison of different samples. These results highlight different nutraceutical properties of dried onion samples processed otherwise, only differing in shape and size, thus pointing out potentially different uses as functional ingredients.

Consumers are increasingly willing to pay a premium for high-quality extra virgin olive oils (HQ-EVOOs) with specific sensory or nutraceutical properties, and originating from particular botanical or geographical origins. Regarding geographic origin, Italy is one of the main producers, with many local production areas, each characterized by its own distinctive typicity. The aim of this study is the chemical, sensory, and nutraceutical profiling of HQ-EVOO produced over two production years in Montespertoli (province of Florence) by 12 producers involved in the “MontEspertOlio” project, funded by the Tuscan Region. Oils were produced based on a production process previously defined and specifically applied to this territory. The shelf-life of the oil was also evaluated over a 12-month period. Legal quality parameters were analyzed according to EU regulation. Phenolic compounds, tocopherols, fatty acid composition, and volatile compounds were analyzed using HPLC-DAD, HPLC-FLD, HS-SPME-GC-MS, and GC-FID, respectively. Finally, sensory analysis was conducted using the Panel Test method. Results showed that Montespertoli HQ-EVOO is characterized by distinctive sensory and chemical traits that fully match consumer preferences, even across two production years characterized by different growing conditions. The shelf-life performance was excellent over 12 months, also showing a protective effect of greater bottle sizes against oxidation.

Essential oils are widely used as functional ingredients for potential multi-purpose functional uses. Hydrosols, co-products of the distillation of plant material, are used in food and cosmetic industries and in biological agriculture, but their volatile composition is poorly investigated. The volatile fractions of essential oils and hydrosols from four less-studied 1,8-cineol-rich Eucalyptus species (E. parvula L.A.S. Johnson & K.D. Hill, E. cinerea F. Muell, E. pulverulenta Sims and E. pulverulenta baby blue Sims), cultivated in Tuscany in a system of organic farming, were characterized by solvent dilution (essential oils) or extraction (hydrosols) followed by GC-MS and by HS-SPME-GC×GC-TOFMS analysis. GC-MS analysis showed that essential oils were mainly constituted by oxygenated monoterpenes, particularly 1,8-cineole, with monoterpenes hydrocarbons up to 10.8%. Relative differences in the abundance of minor terpenes as limonene, α-pinene, γ-terpinene, p-cymene, terpinen-4-ol, α-terpineol, and alloaromandrene were pointed out and seem to be suitable for differentiation among EOs of the four different Eucalyptus species. Hydrosols of these species were characterized for the first time: they were mainly constituted by oxygenated monoterpenes (97.6–98.9%), with 1,8-cineole up to 1.6 g/L, while monoterpene and sesquiterpene hydrocarbons were detected only in traces. HS-SPME-GC×GC-TOFMS analysis also allowed providing metabolic profiling of hydrosols for the direct comparison and visualization of volatile components, pointing out the potentially different uses of these products as functional ingredients in food, beverage, and cosmetic industries.

Evaluation of the Fruit Quality and Phytochemical Compounds in Peach and Nectarine Cultivars

Qualitative traits and chemical properties of 32 peach cultivars (yellow flesh and white flesh fruits) and 52 nectarine cultivars (yellow flesh and white flesh fruits) of different pomological characteristics is performed, and the correlation between cultivars and chemical characteristics is analyzed. Yellow nectarines have a higher variability in soluble solids concentration (SSC) and titratable acidity (TA) values. Evaluation of color parameters (a*, b*, L*) shows a significant interaction between pulp color (white vs. yellow) and types (peaches vs. nectarines) of fruit. The difference between yellow and white fruits is stronger in nectarines than in peaches. Sucrose is the main sugar detected in peach fruits, with a percentage content of 78.37% and 76.70% of the total sugar content in yellow and white peaches, respectively, and 78.29% and 78.12% in yellow and white nectarines, respectively. Variability is found among cultivars for the chemical compounds analyzed. The yellow flesh has higher amounts of total carotenoids and TPC, while white-flesh fruits present an average antioxidant value higher than yellow-flesh fruits. No significant correlation is found for polyphenol content and DPPH, while an interaction (p < 0.005) between neochlorogenic acid content and peaches and nectarines is evidenced, with a neochlorogenic acid content higher in nectarines than in peaches.

In recent years, the excessive use of pesticides has raised environmental and health concerns, which has led to research into natural alternatives. Essential oils may represent a sustainable solution to this problem. In this study, essential oils from Thymbra capitata (L.) Cav., Eucalyptus globulus Labill, and Mentha piperita L. were analyzed by GC–MS and tested in vitro using the poisoned food technique against six olive pathogen fungi: Alternaria sp., Arthrinium marii, Colletotrichum acutatum, Fomitiporia mediterranea, Fusarium solani, and Verticillium dahliae. T. capitata essential oil (0.1 g/L) showed the highest antifungal activity when compared to E. globulus and M. piperita essential oils, which exhibited significantly lower efficacy against the tested olive phytopathogenic fungi. GC–MS analysis revealed that carvacrol is the main compound (76.1%) in T. capitata essential oil. A comparison of the inhibitory effect of T. capitata essential oil (0.1 g/L) and carvacrol (0.07 g/L) on selected fungal strains showed similar results, with carvacrol slightly more effective, although the differences were mostly statistically insignificant, except for C. acutatum. To the authors knowledge, this is the first study demonstrating the inhibitory effect of Thymbra capitata essential oil against A. marii and F. mediterranea. The results of this study represent a basis for the development of new biochemical biopesticides based on T. capitata essential oil as a useful tool for the contrast of some fungal olive tree diseases.

Description of Ficus carica L. Italian Cultivars II: Genetic and Chemical Analysis

Ficus carica L., present in Italy since ancient times, is represented by numerous cultivars grown in both southern and central regions. In recent years, local accessions, as a source of genetic biodiversity, have gained increasing interest for both genetic conservation and their agronomic characteristics, which are well suited for ‘sustainable agriculture’. Based on these considerations, we conducted a parallel study combining the genetic analysis (SSRs marker) and chemical profiling (polyphenols and antioxidant capacity) of fig leaves to characterize 15 cultivars of the Tuscany region. A genetic analysis performed using seven SSR oligonucleotide primers successfully allowed the discrimination of the cultivars studied, with primers MFC2, MFC3, and LMFC30 exhibiting the highest polymorphism. The phytochemical profiling of the leaves, conducted by HPLC-DAD-TOF-MS, revealed 17 phenolic compounds, among which caffeic acid derivatives were the most abundant. The psolaren compound was absent only in Gigante di Carmignano cv. The antiradical capacity varied among cultivars, with Perticone, Brogiotto Nero, and Paradiso exhibiting the highest antiradical capacity. Additionally, Brogiotto Bianco, Corbo, Dottato, Paradiso, Pecciolo Nero, and Verdino contained the highest concentrations of total sugars. Statistically significant differences were observed in total polyphenol content (values ranging from 14.1 to 36.6 mgGAE/gDW) and in flavonoid content (ranging from 25.7 to 52.3 mgQE/gDW). In terms of sugars, the sum of fructose, glucose, and sucrose ranged from 20.60 (Bianco di Carmignano) to 49.24 mg g−1 (Verdino), with fructose present in the highest amounts. In conclusion, the 15 cultivars were completely characterized genetically and chemically, offering valuable insights for both conservation strategies and agricultural applications.

The Pistoia Mountains exhibit a great variety of flora, particularly rich in aromatic plants, such as juniper, mint, savory, helichrysum, and thyme. Thyme is especially notable for its essential oil, typically displaying high thymol and carvacrol content. While the chemotype of thyme determined by its specific terpene composition is genetically controlled, environmental factors, plant age, and seasonality can influence terpene production. This article investigates the morpho-chemical variability of wild thyme plants collected from two different regions of the Pistoia Mountains, identifying five distinct chemotypes. The gas chromatography–mass spectrometry (GC-MS) technique was used to characterize the chemical profiles and determine the seasonal variation in terpene production, identifying spring and summer as the balsamic period, the optimal time for essential oil collection. Furthermore, high-value thyme clones were preserved through in vitro micropropagation, ensuring chemotype stability. These findings contribute to a deeper understanding of wild thyme biodiversity and provide a foundation for practical applications, including the development of value-added products like herb-infused cheeses, plant and animal disease treatments, and integrated pest management strategies in agricultural systems.

Clinical and Sociodemographic Characteristics Associated with Access to Early Intervention Programs for Infants with Prodromes of Autism

Background/Objectives: Increasing scientific evidence supports the importance of early diagnosis of autism spectrum disorder (ASD), followed by timely intervention, in optimizing developmental trajectories. Despite these advances, achieving an early diagnosis remains challenging, and substantial delays in the diagnostic process continue to be reported worldwide. This study aimed to describe the clinical and sociodemographic characteristics associated with early referral to a telehealth parent-mediated intervention program for infants at high likelihood for ASD, under 18 months of age, with the broader goal of informing clinical services in the field of neurodevelopmental disorders. Methods: Infants were evaluated by a multidisciplinary team using standardized measures to assess autism risk, developmental functioning, adaptive behavior, and parental stress. Potential differences in age at access to the program were examined by comparing families who were referred before versus after 12 months of age. Results: Of the 78 families who expressed interest in the program, 69 consented and 60 met eligibility criteria (male/female ratio = 40/20; mean age = 10.0 months). Families were evenly distributed across Italy, and 66% of parents held a university degree. Self-referral accounted for 62% of cases. Higher parental concern was associated with earlier referral and children referred after 12 months of age showed significantly lower developmental and adaptive functioning scores. Conclusions: These findings support the feasibility of identifying prodromes of autism within the first year of life and highlight gaps in specialized services for infants at elevated likelihood in Italy. Maternal concern and self-referral drove early consultation, underscoring the need for improved pediatric training. Future studies should assess longitudinal population-based screening and the feasibility and long-term impact of timely interventions in routine care.
