يعكس هذا الكتاب مظهرا من مظاهر الحضارة العربية في المغرب والأندلس وهو يبني بلغة الطبخ العربي تتوفر في كل منهما كما استعرض الأواني الفخارية والنحاسية والقصديرية والذهبية والزجاجية وغيرها وذكر محاسنها ومساوئها ومبينا ظروف صلاحيتها والكتاب دقيق الترتيب واضح الأقسام والفصول متماسك الأجزاء وأصل هذا الكتاب نسخ عن المخطوطة عمل المحقق على ضبط النص وتحقيقه وأجرى المقارنات بين النسخ المتوفرة ووضع فهارس عامة لألوان الأطعمة وما يتصل بها وأسماء السمك والأدوات المستعملة في الطبخ وحفظ الأطعمة وفهرس ببعض ما يحتاج إلى شرح لاختصاص الأندلسيين به.
