Overview
Sulfur fumigation is adopted in the post-harvest processing of herbal drugs. In addition to the sulfur dioxide residual, sulfur fumigation could also lead to chemical transformations of native compounds in the herbs to generate sulfur-containing derivatives. In this study, influence of sulfur fumigation on the chemical composition of Farfarae Flos (FF) was investigated by the ultra-high-performance liquid chromatography-Q exactive hybrid quadrupole-orbitrap high-resolution accurate mass spectrometry (UHPLC-Q-orbitrap HRMS). In addition to 103 native compounds in FF, 12 sulfur-containing caffeoylquinic acids were also detected after sulfur fumigation. The further screening results showed that the diagnostic sulfate/sulfite derivatives were effective for rapid discrimination of sulfur-fumigated FF samples. In brief, sulfur fumigation can induce chemical transformations of phenylpropanoids, and the corresponding sulfur-containing derivatives could be regarded as the characteristic chemical markers of sulfur-fumigated FF.
