يتحدث الكتاب عن إدارة المزارع حيث أن موضوع إدارة المزارع يعتبر علما لأننا نحاول في ھذا الموضوع تطبیق القوانین والمبادئ العامة في الاقتصاد على مزرعة معینة ويمكن اعتبار موضوع إدارة المزارع فنا أيضا والمقصود بالفن ھنا الكفاءة بالمعنى الجسمي والعقلي حیث يستطیع كثیر من الفلاحین أن يؤدوا واجباتھم بطريقة أمھر أو أكثر كفاءة وأسرع وأسھل من غیرھم وكمثال على الناحیة الفنیة في الإدارة نذكر أن استخدام العمال في العمل بكفاءة عالیة يؤدي إلى توفیر الكثیر من الوقت والجھد فإذا تدرب مجموعة من العمال على جني المحصول الطماطم مثلا وتعبئته في صناديق أو سلال بطريقة فنیة أي بحركات يؤدونھا فإن كمیة الحاصل المجموع سوف تزيد وذلك نتیجة تنظیم العمل وحركات العمال التي تؤدي إلى تنظیم الوقت.
