Food and Health in Early Modern Europe
Food and Health in Early Modern Europe is both a history of food practices and a history of the medical discourse about that food. It is also an exploration of the interaction between the two: the relationship between evolving foodways and shifting medical advice on what to eat in order to stay healthy. It provides the first in-depth study of printed dietary advice covering the entire early modern period, from the late-15th century to the early-19th; it is also the first to trace the history of European foodways as seen through the prism of this advice. David Gentilcore offers a doctor’s-eye view of changing food and dietary fashions: from Portugal to Poland, from Scotland to Sicily, not forgetting the expanding European populations of the New World. In addition to exploring European regimens throughout the period, works of materia medica, botany, agronomy and horticulture are considered, as well as a range of other printed sources, such as travel accounts, cookery books and literary works. The Waterwheels of Lizzafusina: Technological Innovation, Patenting, and Practical Necessity in Sixteenth-Century Venice
This article explores the reliance of watermen ( acquaroli ) in early modern Venice on increasingly sophisticated waterwheels, designed, produced, and patented by competing inventors during the sixteenth and early seventeenth centuries, to load fresh water supplies that supplemented the rainwater on which the city otherwise depended for its freshwater needs. Using a range of archival and printed sources, this article examines the tools that delivered water to the watermen's barges and the state-sponsored competition this spurred among inventors. More broadly, the article investigates how Venice's patent process compared to those elsewhere in sixteenth-century Europe, with specific attention to the status of petitioners, contemporary notions of expertise, knowledge flows, and the role of the state.
In Praise of the Ordinary: Shifting Knowledge and Practice in the Medical Use of Drinking Water in Italy, 1550–1750
This article is conceived as a contribution to our increasing appreciation of the importance of water for drinking purposes in early modern culture. By analyzing the medical recommendations contained in the case histories and consultations of three prominent Italian doctors—Epifanio Ferdinando, Francesco Redi, and Francesco Torti—it provides evidence of shifting medical knowledge and practice in the use of drinking water. It traces how, as the medical philosophies shifted, so too did the medical use of drinking water, as both aliment (part of a healthy and healing diet) and medicament (part of therapy to treat specific diseases). The most significant finding regards the increasing appreciation and enthusiasm for the health benefits of drinking ordinary local waters, from the mid-seventeenth century. Any ordinary local water would do—as long as it was pure, of good quality, and reputable—overturning a long-standing hierarchy of waters inherited from the ancient world.

Proteins, Pathologies and Politics presents an international and historical approach to dietary change and health, contrasting current concerns with how issues such as diabetes, cancer, vitamins, sugar and fat, and food allergies were perceived in the 19th and 20th centuries. Louis Sambon and the Clash of Pellagra Etiologies in Italy and the United States, 1905-14
This article explores the extent to which the bacterial concept of disease acted as an obstacle to the understanding of deficiency diseases, by focusing on explorations into the cause of pellagra in the early twentieth century. In 1900, pellagra had been epidemic in Italy for 150 years and was soon to become so in the United States, yet the responses of medical investigators differed substantially. To account for these, the article reconstructs the sharply contrasting reactions to a provocative theory proposed by Louis Sambon. Applying a tropical diseases approach to pellagra, Sambon argued that pellagra had nothing at all to do with maize consumption, as the Italians had long thought, but was caused by the bite of a parasite-carrying insect. Italian pellagrologists, involved in a dogmatic quest for a toxin in maize, and with pellagra rates there on the decline, marginalized the Sambon hypothesis. By contrast, in the United States, with pellagra on the rise, the dominant infectious paradigm put Sambon center stage, his proposed etiology shaping the earliest American investigations. When the deficiency disease concept gained currency in 1913, the relatively closed world of Italian pellagrology was wrong-footed, while the more open-ended U.S. community was better able to follow up the new lead. The article discusses what these shifts and the resulting controversies reveal about the medical contexts. The actor-centered approach, with reaction to Sambon's intervention as a kind of test-case, is the key to understanding these controversies and why they mattered.

Medical Charlatanism in Early Modern Italy
From the mid-sixteenth century onwards, the Italian Protomedicato tribunals, Colleges of Physicians, or Health Offices (jurisdiction varied from state to state) required charlatans to submit their wares for inspection and, upon approval, pay a licence fee in order to set up a stage from which to perform and sell them. The licensing of charlatans became an administrative routine. As far as the medical magistracies were concerned, charlatans had a defineable identity, constituting a specific trade or occupation. This book studies the way charlatans were represented, by contemporaries and by historians, how they saw themselves and, most importantly, it reconstructs the place of charlatans in early modern Italy. It explores the goods and services charlatans provided, their dealings with the public and their marketing strategies. It does so from a range of perspectives: social, cultural, economic, political, geographical, biographical and, of course, medical. Charlatans are not just some curiosity on the fringes of medicine: they offered health care to an extraordinarily wide sector of the population. Moreover, from their origins in Renaissance Italy, the Italian ciarlatano was the prototype for itinerant medical practitioners throughout Europe. This book offers a different look at charlatans. It is the first to take seriously the licences issued to charlatans in the Italian states, compiling them into a 'charlatans database' of over 1,300 charlatans active throughout Italy over the course of some three centuries. In addition, it makes use of other types of archival documents, such as trial records and wills, to give the charlatans a human face, as well as a wide range of artistic and printed sources, not forgetting the output of the charlatans themselves, in the form of handbills and pamphlets.
