Easy-to-apply hints abound: You can amplify cinnamon-sugar toast with a few drops of cinnamon bark essential oil in the butter, for example, or dip into sweet orange, ylang-ylang and geranium bath salts to ward off depression. Under each highlighted herb or spice is an \"In the Everyday Kitchen\" aside. With vanilla, for example, the authors suggest that, \"After you scrape the seeds out of the vanilla beans, bury the pods in sugar. After a week, the sugar will be perfumed. Use the vanilla sugar to sweeten whipped cream, or in recipes for cookies or cakes. Try using vanilla absolute instead of vanilla extract for a truer flavor (you will need less, as the absolute is much more powerful).\" All the recipes in Aroma are so alluring, though, our challenge was choosing a few to test on a weekend when we'd have time to prepare them. We finally settled on a menu of spiced hot chocolate followed by tarragon-marinated beets with frisee and radishes; braised beef cheeks with vanilla, saffron and orange over fork- mashed Yukon gold potatoes with rosemary-infused oil; and chocolate- cinnamon caramels for dessert. Beef cheeks are a dense, tough cut of meat that become incredibly moist and unctuous when braised. The meat is slowly cooked with vanilla, saffron and orange; tomato and red wine give the cooking liquid acidity and definition. Here the aroma of the vanilla is much more prevalent than the flavor. The intense beef flavor remains the central element in the dish, with the other ingredients contributing a subtle, complex bouquet of aromas and flavors. If you cannot find beef cheeks, substitute short ribs or any other braising cut. The beef can be made a few days ahead. Just refrigerate it immersed in the strained cooking liquid, then reheat it gently in the same liquid.

We protest at the attacks on WikiLeaks and, in particular, on Julian Assange (Report, 9 December) The leaks have assisted democracy in revealing the real views of our governments over a range of issues which have been kept secret and are now irreversibly in the public domain. All we knew about the mass killing, torture and corruption in Iraq and Afghanistan has been confirmed. The world's leaders can no longer hide the truth by simply lying to the public. The lies have been exposed.
