Ancient Cookware from the Levant : An Ethnoarchaeological Perspective
\"Ancient clay cooking pots in the southern Levant are unappealing, rough pots that are not easily connected to meals known from ancient writings or iconographic representations. To narrow the gap between excavated sherds and ancient meals, the approach adopted in this study starts by learning how food traditionally was processed, preserved, cooked, stored, and transported in clay containers. This research is based on the cookware and culinary practices in traditional societies in Cyprus and the Levant, where people still make pots by hand. Clay pots were not only to cook or hold foods. Their absorbent and permeable walls stored memories of food residue. Biblical texts provide numerous terms for cookware without details of how they looked, how they were used, or why there are so many different words. Recent studies of potters for over a century in the southern Levant provide a wealth of names whose diversity helps to delineate the various categories of ancient cookware and names in the text. Ancient Cookware from the Levant begins with a description of five data sources: excavations, ancient and medieval texts, 20th century government reports, early accounts of potters, and ethnoarchaeological studies. The final section focuses on the shape, style, and manufacture of cookware for the past 12,000 years. For archaeologists, changes in cooking pot morphology offer important chronological information for dating entire assemblages, from Neolithic to recent times. PTFE-coated non-stick cookware and toxicity concerns: a perspective

PTFE is used as an inner coating material in non-stick cookware. This unique polymer coating prevents food from sticking in the pans during the cooking process. Such cookware is also easy to wash. At normal cooking temperatures, PTFE-coated cookware releases various gases and chemicals that present mild to severe toxicity. Only few studies describe the toxicity of PTFE but without solid conclusions. The toxicity and fate of ingested PTFE coatings are also not understood. Moreover, the emerging, persistent, and well-known toxic environmental pollutant PFOA is also used in the synthesis of PTFA. There are some reports where PFOA was detected in the gas phase released from the cooking utensils under normal cooking temperatures. Due to toxicity concerns, PFOA has been replaced with other chemicals such as GenX, but these new alternatives are also suspected to have similar toxicity. Therefore, more extensive and systematic research efforts are required to respond the prevailing dogma about human exposure and toxic effects to PTFE, PFOA, and GenX and other alternatives.

Ergonomic Risk Assessment during an Informal Hand-Made Cookware Operation: Extending an Existing Model

The work conducted in the informal sector is highly variable within and between days. Characterizing ergonomic exposures remains a challenge because of unstructured work settings and schedules. The existing ergonomic risk assessment tools have been widely used in formal work settings with a narrow range of exposure, and for predefined tasks that primarily constitute a daily routine. There is limited information in the literature on how they have been applied in informal workplaces. The aim of this study was to extend an existing risk assessment tool and to evaluate the applicability of the extended tool by assessing ergonomic exposure related to hand-made cookware operations. Eighteen hand-made cookware makers were recruited from six sites. A walkthrough risk assessment questionnaire was used to collect information on workers, tasks, work stations and workplace structures. The Rapid Upper Limb Assessment (RULA) screening tool was extended by including duration and vibration. An action priority matrix was used to guide intervention. According to the RULA action levels, the workers required investigation and changes soon, and immediate investigation and changes. The use of an action priority matrix was appropriate, and indicated that all the workers assessed were within the high to very high exposure domain and required immediate corrective measures. The methodology used proved to be an effective and reliable strategy for identifying ergonomic exposure among hand-made cookware makers.

Assessment of the migration of perfluorinated compounds and primary aromatic amines from PTFE-coated non-stick cookware marketed in Turkey

Two perfluorinated compounds (PFCs) and 17 different primary aromatic amines (PAAs) were analyzed by liquid chromatography–tandem mass spectrometry (LC–MS/MS) in migrants from 35 cookware samples marketed in Turkey. Among PFCs, only PFOA was identified in 6 samples. Only two components among PAAs, namely aniline (ANL) and 4,4′-methylenedianiline (4,4′-MDA), were detected in analyzed samples. Although aniline was detected in all samples, 4,4′-MDA was detected in only 4 samples. The effects of simulant volume, temperature, and repeated use on the release of these migrants from non-stick cookware were investigated. Three simulant volumes (200, 500, and 1000 mL) were used in migration tests. PFCs and PAAs were identified in simulants at 200 and 500 mL. The increase in the amount of simulant caused a decrease in the concentration of these migrants. The lowest migration values were observed in the samples at consecutive usage cycles. PFCs and PAAs exhibited the highest migration ability with increasing temperature.
