Chinese food is one of the most recognizable and widely consumed cuisines in the world. Almost no town on earth is without a Chinese restaurant of some kind, and Chinese canned, frozen, and preserved foods are available in shops from Nairobi to Quito. But the particulars of Chinese cuisine vary widely from place to place as its major ingredients and techniques have been adapted to local agriculture and taste profiles. To trace the roots of Chinese foodways, one must look back to traditional food systems before the early days of globalization.
Food and Environment in Early and Medieval Chinatraces the development of the food systems that coincided with China's emergence as an empire. Before extensive trade and cultural exchange with Europe was established, Chinese farmers and agriculturalists developed systems that used resources in sustainable and efficient ways, permitting intensive and productive techniques to survive over millennia. Fields, gardens, semiwild lands, managed forests, and specialized agricultural landscapes all became part of an integrated network that produced maximum nutrients with minimal input-though not without some environmental cost. E. N. Anderson examines premodern China's vast, active network of trade and contact, such as the routes from Central Asia to Eurasia and the slow introduction of Western foods and medicines under the Mongol Empire. Bringing together a number of new findings from archaeology, history, and field studies of environmental management,Food and Environment in Early and Medieval Chinaprovides an updated picture of language relationships, cultural innovations, and intercultural exchanges.
Food security and sustanability : investment and financing along agro-food chains

. As food from the sea represents only 17% of the current production of edible meat, we ask how much food we can expect the ocean to sustainably produce by 2050. Here we examine the main food-producing sectors in the ocean—wild fisheries, finfish mariculture and bivalve mariculture—to estimate ‘sustainable supply curves’ that account for ecological, economic, regulatory and technological constraints. We overlay these supply curves with demand scenarios to estimate future seafood production. We find that under our estimated demand shifts and supply scenarios (which account for policy reform and technology improvements), edible food from the sea could increase by 21–44 million tonnes by 2050, a 36–74% increase compared to current yields. This represents 12–25% of the estimated increase in all meat needed to feed 9.8 billion people by 2050. Increases in all three sectors are likely, but are most pronounced for mariculture. Whether these production potentials are realized sustainably will depend on factors such as policy reforms, technological innovation and the extent of future shifts in demand.
Modelled supply curves show that, with policy reform and technological innovation, the production of food from the sea may increase sustainably, perhaps supplying 25% of the increase in demand for meat products by 2050.

This edited volume builds on existing alternative food initiatives and food movements research to explore how a systems approach can bring about health and well-being through enhanced collaboration. Chapters describe the myriad ways community-driven actors work to foster food systems that are socially just, embed food in local economies, regenerate the environment and actively engage citizens. Drawing on case studies, interviews and Participatory Action Research projects, the editors share the stories behind community-driven efforts to develop sustainable food systems, and present a critical assessment of both the tensions and the achievements of these initiatives. The volume is unique in its focus on approaches and methodologies that both support and recognize the value of community-based practices. Throughout the book the editors identify success stories, challenges and opportunities that link practitioner experience to critical debates in food studies, practice and policy. By making current practices visible to scholars, the volume speaks to people engaged in the co-creation of knowledge, and documents a crucial point in the evolution of a rapidly expanding and dynamic sustainable food systems movement. Entrenched food insecurity, climate change induced crop failures, rural-urban migration, escalating rates of malnutrition related diseases, and aging farm populations are increasingly common obstacles for communities around the world. Merging private, public and civil society spheres, the book gives voice to actors from across the sustainable food system movement including small businesses, not-for-profits, eaters, farmers and government. Competitiveness of Small Farms and Innovative Food Supply Chains: The Role of Food Hubs in Creating Sustainable Regional and Local Food Systems

Over the last decades, the economic, social and environmental sustainability of the conventional agri-food system has and continues to be contested within both academic and public institutions. For small farms, the unsustainability of the food system is even more serious; farms’ declining share of profit and the cost-price squeeze of commodity production has increased barriers to market access with the inevitable effect of agricultural abandonment. One way forward to respond to the existing conventional agri-food systems and to create a competitive or survival strategy for small family farms is the re-construction of regional and local agri-food systems, aligning with Kramer and Porter’s concept of shared value strategy. Through a critical literature review, this paper presents “regional and local food hubs” as innovative organizational arrangements capable of bridging structural holes in the agri-food markets between small producers and the consumers—individuals and families as well as big buyers. Food hubs respond to a supply chain (or supply network) organizational strategy aiming at re-territorialising the agri-food systems through the construction of what in the economic literature are defined as values-based food supply chains.

Never out of season : how having the food we want when we want it threatens our food supply and our future
The bananas we eat today aren't our parents' bananas: We eat a recognizable, consistent fruit that was standardized in the 1960s from dozens into one basic banana. But because of that, the banana we love is dangerously susceptible to a pathogen that might wipe them out. That's the story of our food today: Modern science has brought us produce in perpetual abundance--once-rare fruits are seemingly never out of season, and we breed and clone the hardiest, best-tasting varieties of the crops we rely on most. As a result, a smaller proportion of people on earth go hungry today than at any other moment in the last thousand years, and the streamlining of our food supply guarantees that the food we buy, from bananas to coffee to wheat, tastes the same every single time. Our corporate food system has nearly perfected the process of turning sunlight, water and nutrients into food. But our crops themselves remain susceptible to nature's fury. Increasing global food demand, low grain reserves and climatechange threaten the stability of food systems on national to globalscales. Policies to increase yields, irrigation and tolerance of cropsto drought have been proposed as stability-enhancing solutions.Here we evaluate a complementary possibility—that greaterdiversity of crops at the national level may increase the year-to-yearstability of the total national harvest of all crops combined. We testthis crop diversity–stability hypothesis using 5 decades of data onannual yields of 176 crop species in 91 nations. We find that greatereffective diversity of crops at the national level is associated withincreased temporal stability of total national harvest. Crop diversityhas stabilizing effects that are similar in magnitude to the observeddestabilizing effects of variability in precipitation. This greaterstability reflects markedly lower frequencies of years with sharpharvest losses. Diversity effects remained robust after statisticallycontrolling for irrigation, fertilization, precipitation, temperatureand other variables, and are consistent with the variance-scalingcharacteristics of individual crops required by theory for diversityto lead to stability. Ensuring stable food supplies is a challenge thatwill probably require multiple solutions. Our results suggest thatincreasing national effective crop diversity may be an additional wayto address this challenge.

How we produce and consume food has a bigger impact on Americans' well-being than any other human activity. The food industry is the largest sector of our economy; food touches everything from our health to the environment, climate change, economic inequality, and the federal budget. From the earliest developments of agriculture, a major goal has been to attain sufficient foods that provide the energy and the nutrients needed for a healthy, active life. Over time, food production, processing, marketing, and consumption have evolved and become highly complex. The challenges of improving the food system in the 21st century will require systemic approaches that take full account of social, economic, ecological, and evolutionary factors. Policy or business interventions involving a segment of the food system often have consequences beyond the original issue the intervention was meant to address.
A Framework for Assessing Effects of the Food System develops an analytical framework for assessing effects associated with the ways in which food is grown, processed, distributed, marketed, retailed, and consumed in the United States. The framework will allow users to recognize effects across the full food system, consider all domains and dimensions of effects, account for systems dynamics and complexities, and choose appropriate methods for analysis. This report provides example applications of the framework based on complex questions that are currently under debate: consumption of a healthy and safe diet, food security, animal welfare, and preserving the environment and its resources.
A Framework for Assessing Effects of the Food System describes the U.S. food system and provides a brief history of its evolution into the current system. This report identifies some of the real and potential implications of the current system in terms of its health, environmental, and socioeconomic effects along with a sense for the complexities of the system, potential metrics, and some of the data needs that are required to assess the effects. The overview of the food system and the framework described in this report will be an essential resource for decision makers, researchers, and others to examine the possible impacts of alternative policies or agricultural or food processing practices.
