The question of the animal and religion
Through an absorbing investigation into recent, high-profile scandals involving one of the largest kosher slaughterhouses in the world, located unexpectedly in Postville, Iowa, Aaron S. Gross makes a powerful case for elevating the category of the animal in the study of religion. Major theorists have almost without exception approached religion as a phenomenon that radically marks humans off from other animals, but Gross rejects this paradigm, instead matching religion more closely with the life sciences to better theorize human nature. Gross begins with a detailed account of the scandals at Agriprocessors and their significance for the American and international Jewish community. He argues that without a proper theorization of \"animals and religion,\" we cannot fully understand religiously and ethically motivated diets and how and why the events at Agriprocessors took place. Subsequent chapters recognize the significance of animals to the study of religion in the work of Ernst Cassirer, Emile Durkheim, Mircea Eliade, Jonathan Z. Smith, and Jacques Derrida and the value of indigenous peoples' understanding of animals to the study of religion in our daily lives. Gross concludes by extending the Agribusiness scandal to the activities at slaughterhouses of all kinds, calling attention to the religiosity informing the regulation of \"secular\" slaughterhouses and its implications for our relationship with and self-imagination through animals.
The Use of Organic Acids (Lactic and Acetic) as a Microbial Decontaminant during the Slaughter of Meat Animal Species: A Review
Wild ungulate species provide a much-needed protein source to many communities in developed and developing countries. Frequently, these game meat animals are slaughtered, and the meat is unknowingly contaminated by microorganisms and released to the unsuspecting public. This review investigates the global usage of organic acids (lactic and acetic acids) as microbial decontamination strategies during slaughter. The results show that there is a more open-minded approach to adopting possible decontamination plans as a tool to improve meat safety during slaughter. Developed countries continue to adopt these strategies, while developing countries are lagging behind. While decontamination of carcasses can lead to a reduction of microbial load on these carcasses, this strategy must not be seen as a replacement of hygiene management during the animals’ slaughter.

The history of adipocyte and adipose tissue research in meat animals
Abstract Research in growth and development, accumulation of lean, and fat metabolism in farm animals was gaining attention principally from a carcass perspective by meat scientists and animal nutritionists about a century ago. Under the auspices of the USDA Cooperative State Research Service, State Agricultural Experiment Stations, and the Land Grant University system, researchers from various universities embarked on forming combined regional research projects (across states) with unifying specific aims. In the North Central region, this included states in the upper and lower Mid-West region. For those interested in improving production and eating quality of meats, initially a single multistate committee was formed in the North Central region which was active for many years. However, these efforts were later split into two committees with one addressing lipids and the other muscle biology. Herein we reviewed research of workers in the North Central region in the 1940s and 1950s and to a limited extent in the 2000s on meat animal’s lipid metabolism. We further reviewed the history of meat animal carcass composition research and the influence of the Word War II (WWII) period on porcine carcass composition. The development and utilization of adipocyte cellularity research methodology in meat animals was demonstrated. The history of the progression of adipose tissue metabolism research in meat animals was also reviewed. Finally, the history of research on lipid deposition in muscle that ultimately precipitated the expanded marbling and the intramuscular research was delineated. By the 1970s, great interest had emerged on how to curtail excessive fat deposition in meat-producing animals. Thus, for some segments of the animal lipid metabolism community, the focus then shifted to exploring the processes of lipogenesis and lipolysis in farm animals. These efforts morphed into research efforts in fat cell biology and cellularity. Today adipocyte biology is studied by many in the biomedical and agricultural-life sciences communities. In this article, we present a history of this research and notable achievements up to the 1980s. Herein we revisit these research efforts and results that have become an important knowledge base for growth and development, nutrition, and meat science research.
Space allowance: a tool for improving behavior, milk and meat production, and reproduction performance of buffalo in different housing systems—a review
Buffalo population has dramatically increased during the last two decades, especially in tropical and subtropical regions. Although buffalo are important milk and meat-producing animal, still practices of buffalo farming and welfare aspects are not well established. Housing system and stocking density are significant factors that affect the welfare and production of animals; however, no space allowance standards have been demonstrated for buffalo at different ages. This review article presents the following: (1) an overview of buffalo subtypes and the geographical distribution of buffalo populations and their production; (2) the effect of housing systems and space allowance on the social behavior and welfare indices; (3) the effects of space allowance on milk production and growth performance of buffalo; and (4) the relationship between space allowance and reproductive performance. Although the limited data in this area of research, it can be driven that a larger space allowance with access to a pool, especially during the hot season, maintains buffalo production at optimal levels. Moreover, optimal floor space improves the welfare and social indices of buffalo; however, there are discrepancies in aggressive and agonistic behavior results. Surprisingly, the reproductive performance of buffalo was not affected by space allowance. Therefore, further research is needed to identify the impact of the housing aspects, including space allowance and enrichment tools, on the productive performance, and welfare indices of buffalo. This would assist in implementing welfare-economic standards for buffalo production and reveal the potentiality of this eco-friendly animal.
Re-enchanting meat: how sacred meaning-making strengthens the ethical meat movement
Anthropologists have long documented rituals that reinforce the social and spiritual aspects of killing and eating animals. The historical processes of modernization, industrialization, and the spread of market capitalism have driven many such references to sacredness out of meat production in North America, leading dominant social relations around meat into what Max Weber famously termed “disenchantment.” In this article, I argue that re-enchanting discourses are one technique being used to develop the alternative production models of ethically raised meat—animals raised for human consumption with priority on sustainability and well-being. As people redesign a food system that resists the meat industry’s churn of pigs, cows, and chickens from feed lot to factory, they are not just rearranging the material structures of production. They also foster discourses and practices of sacredness, mutuality, and wonder. Ethical meat advocates use these discourses particularly to make sense of conflicts regarding the non-commodifiable nature of mortality and harmony. This article draws on ethnographic research among Southern Wisconsin butchers, farmers, and customers as well as public discourse analysis to trace meaning-making strategies that powerfully counter the commercial meat industry by re-enchanting meat.
