Reduced red and processed meat consumption is associated with lower diet costs in US households: a national analysis of protein substitutions

To examine the association between red and processed meat consumption and total food expenditures in US households and explore whether households could reduce food costs by substituting these meats with other protein sources such as poultry, seafood, eggs and plant proteins.
Cross-sectional study using data from the National Household Food Acquisition and Purchase Survey (FoodAPS). Using adult male equivalents (AME) for standardisation, we categorised red and processed meat purchases into quintiles. We used generalised linear models to explore the association between red or processed meat consumption and food expenditures and the cost effect of substituting meat with other proteins.
United States.
Data from 4739 households with valid acquisition information from FoodAPS, a stratified multistage probability sample of US households.
Higher red and processed meat consumption were both significantly associated with higher total weekly food expenditures, particularly among households with low income. Substituting red or processed meat with poultry, eggs or plant proteins did not significantly affect overall food expenditures, whereas replacing meat with seafood, especially varieties high in
-3 fatty acids, led to increased costs.
Reducing red and processed meat consumption could offer savings for households, particularly those with low income. Although substitutions with seafood high in
-3 could increase expenses, alternative protein sources like poultry and plant proteins may serve as cost-neutral replacements. Public health strategies should emphasise dietary shifts' economic, health and environmental benefits and aim to make nutritious yet affordable protein sources more accessible.

Though the international trade in agricultural commodities is worth more than $1.6 trillion/year, we still have a poor understanding of the supply chains connecting places of production and consumption and the socioeconomic and environmental impacts of this trade. In this study, we provide a wall-to-wall subnational map of the origin and supply chain of Brazilian meat, offal, and live cattle exports from 2015 to 2017, a trade worth more than $5.4 billion/year. Brazil is the world’s largest beef exporter, exporting approximately one-fifth of its production, and the sector has a notable environmental footprint, linked to one-fifth of all commodity-driven deforestation across the tropics. By combining official per-shipment trade records, slaughterhouse export licenses, subnational agricultural statistics, and data on the origin of cattle per slaughterhouse, we mapped the flow of cattle from more than 2,800 municipalities where cattle were raised to 152 exporting slaughterhouses where they were slaughtered, via the 204 exporting and 3,383 importing companies handling that trade, and finally to 152 importing countries. We find stark differences in the subnational origin of the sourcing of different actors and link this supply chain mapping to spatially explicit data on cattle-associated deforestation, to estimate the “deforestation risk” (in hectares/year) of each supply chain actor over time. Our results provide an unprecedented insight into the global trade of a deforestation-risk commodity and demonstrate the potential for improved supply chain transparency based on currently available data.

Red and processed meat consumption and purchasing behaviours and attitudes: impacts for human health, animal welfare and environmental sustainability

Higher intakes of red and processed meat are associated with poorer health outcomes and negative environmental impacts. Drawing upon a population survey the present paper investigates meat consumption behaviours, exploring perceived impacts for human health, animal welfare and the environment.
Structured self-completion postal survey relating to red and processed meat, capturing data on attitudes, sustainable meat purchasing behaviour, red and processed meat intake, plus sociodemographic characteristics of respondents.
Urban and rural districts of Nottinghamshire, East Midlands, UK, drawn from the electoral register.
UK adults (n 842) aged 18-91 years, 497 females and 345 males, representing a 35·6 % response rate from 2500 randomly selected residents.
Women were significantly more likely (P60 years) were more likely to hold positive attitudes towards animal welfare (P<0·01). Less than a fifth (18·4 %) of the sample agreed that the impact of climate change could be reduced by consuming less meat, dairy products and eggs. Positive attitudes towards animal welfare were associated with consuming less meat and a greater frequency of 'higher welfare' meat purchases.
Human health and animal welfare are more common motivations to avoid red and processed meat than environmental sustainability. Policy makers, nutritionists and health professionals need to increase the public's awareness of the environmental impact of eating red and processed meat. A first step could be to ensure that dietary guidelines integrate the nutritional, animal welfare and environmental components of sustainable diets.

This study investigated the availability, price, nutritional composition, and quality of plant-based meat alternatives (PBMAs) in supermarkets and hypermarkets in Petaling, the most populated district in Malaysia. The survey covered 85 stores through on-site visits, identifying 251 unique PBMA products from 42 brands. The PBMAs were categorized into nine groups: Burgers/Patties, Coated Meat, Luncheon Meat, Minced Meat, Pastries, Pieces/Chunks/Fillets/Strips, Prepacked Cooked Meals, Sausages, and Seafood Balls/Cakes/Meatballs. The survey indicated widespread availability of PBMAs in Petaling, with premium supermarkets offering the most extensive selection. The median prices of PBMAs across categories were below MYR 7 (~USD 1.6) per 100 grams, with Pieces/Chunks/Fillets/Strips being the most affordable. Nutritionally, PBMAs exhibited lower energy, total fat, saturated fat, sodium, and protein levels than meat equivalents, while showing higher carbohydrate content. Nutri-Score profiling revealed generally favourable scores (Grade A to C), indicating moderate to good nutritional quality. These findings suggest that PBMAs offer a viable alternative for consumers in Malaysia seeking healthier and more sustainable food options, particularly for those aiming to reduce their intake of fat and sodium. However, PBMAs may not be recommended for individuals seeking a higher protein and lower carbohydrate diet. Further research is recommended to explore micronutrient profiles to enhance dietary decision-making.

Taxes to red and processed meat to promote sustainable and healthy diets in Mexico

Consumption of red and processed meat is above sustainable and healthy dietary targets in Mexico. Policies to promote greater adherence such as taxing meat are needed to reduce consumption. Here, we evaluated how price increases to red and processed meat could shift consumption for meat as well as other key food groups.
Using data from the Mexican National Household Income and Expenditure Survey (2018, 2020, 2022), we estimated own- and cross-price elasticities of demand for 10 food groups. These were used to predict changes in quantity demanded of each food group according to price increase scenarios.
Price increases to meat increased demand for substitutes such as fruits and vegetables, legumes, poultry, and seafood, and reduced demand for salty snacks, sweets and sugary beverages. Substantial increases to the price of processed meat markedly reduced processed meat consumption, increased consumption of protein- and nutrient-rich foods, and resulted in more modest levels of red meat consumption. Lower-income groups were more sensitive to price increases but still met dietary recommendations for meat and substituted these foods with alternatives such as legumes and seafood.
Increasing the price of red and processed meat through a tax may promote greater adherence to sustainable and healthy dietary targets in Mexico. It simultaneously increased demand for healthier substitutes, and reduced demand for unhealthy complements. Substantially raising the price of processed meat only may be an effective strategy for addressing diet-related risk factors, while delivering environmental benefits. Additionally, meat taxes have the potential to promote improvements in diet quality and equitable health outcomes.

The Impact of the Food Labeling and Other Factors on Consumer Preferences Using Discrete Choice Modeling—The Example of Traditional Pork Sausage

In our study, we examined whether product characteristics indicated by food labels matter in purchasing decisions for sausage made from traditional Hungarian mangalica pork; and how much consumers are willing to pay for them. On the other hand, we also tried to measure whether any changes in consumers’ preferences occurred in recent years. Two product characteristics (label of origin and different mangalica meat content) and two other factors (place of purchase and price) are examined in a discrete choice experiment based on stated preference data. According to our expectations, government-funded consumer campaigns in recent years have had an impact on consumers purchase of this traditional product, and they pay more attention to food labels, which can also be influenced by sociodemographic characteristics. Our results have been compared to a previous choice-model based research, investigating consumers’ attitude towards similar mangalica pork products. Three different types of models (multinomial logit, random parameter logit, and latent class) are employed, from which two types of models account for the heterogeneity in preferences. Based on the results, it can be concluded that the advertisements promoting traditional meat consumption had only a partial effect on consumer attitudes. Consumers clearly prefer the label of origin indicating meat from registered animals and purchasing on the farmers’ market, but according to the indication of the different mangalica meat content in the product, we have already reached conflicting results. Three consumer segments were identified: “price sensitive, loyal to label, label neutral” based on latent class model estimates.

Meat consumption is rising annually as human populations grow and affluence increases. Godfray et al. review this trend, which has major negative consequences for land and water use and environmental change. Although meat is a concentrated source of nutrients for low-income families, it also enhances the risks of chronic ill health, such as from colorectal cancer and cardiovascular disease. Changing meat consumption habits is a challenge that requires identifying the complex social factors associated with meat eating and developing policies for effective interventions. Science , this issue p. eaam5324 Both the global average per capita consumption of meat and the total amount of meat consumed are rising, driven by increasing average individual incomes and by population growth. The consumption of different types of meat and meat products has substantial effects on people’s health, and livestock production can have major negative effects on the environment. Here, we explore the evidence base for these assertions and the options policy-makers have should they wish to intervene to affect population meat consumption. We highlight where more research is required and the great importance of integrating insights from the natural and social sciences.

Effect of Meat Price on Race and Gender Disparities in Obesity, Mortality and Quality of Life in the US: A Model-Based Analysis

There are large differences in the burden and health implications of obesity by race and gender in the US. It is unclear to what extent policies modifying caloric consumption change the distribution of the burden of obesity and related health outcomes. Meat is a large component of the American diet. We investigate how changing meat prices (that may result from policies or from exogenous factors that reduce supply) might impact the burden of obesity by race and gender.
We construct a microsimulation model that evaluates the 15-year body-mass index (BMI) and mortality impact of changes in meat price (5, 10, 25, and 50% increase) in the US adult population stratified by age, gender, race, and BMI.
Under each price change evaluated, relative to the status quo, white males, black males, and black females are expected to realize more dramatic reduction in 2030 obesity prevalence than white females. Life expectancy gains are also projected to differ by subpopulation, with black males far less likely to benefit from an increase in meat prices than other groups.
Changing meat prices has considerable potential to affect population health differently by race and gender. In designing interventions that alter the price of foods to consumers, it is not sufficient to assess health effects based solely on the population as a whole, since differential effects across subpopulations may be substantial.
