Instead, she takes inspiration from her customers who have been opting for quicker, lighter fare to fit their fast-paced 21st century lives. --This recipe is from \"Keep it Seasonal,\" by Annie Wayte, who suggests as a variation serving the sandwiches cut into bite-size hors d'oeuvres paired with rose Champagne. 2. Toast the bread. Place a small spoonful of the chive creme fraiche on 1 slice of toast. Layer one-fourth of the cucumbers, smoked salmon and watercress on top, then sandwich with a second piece of toast. Repeat the layers, finishing with a third piece of toast on top. Press down firmly and secure the sandwich with toothpicks.

Dining The hotel had no room service trolleys during our stay, so our lunch arrived via three waiters balancing plates of open-faced smoked salmon and egg salad sandwiches and grilled cheese sandwiches with fries much to the delight of my children. We set up our room service picnic on the bed and gorged on a shocking amount of food for four moderately hungry people. Later that night at the Tap Room, after a dinner of mushroom salad with goat cheese and hazelnuts, mussels with garlic sausage and toast, and black bean chili with cornbread, we had to remind ourselves not to lick our plates clean. It was a testament to [Annie Wayte]'s extraordinary talents. The breakfast, included in the rate, and served in the cheery Garden Room, includes oatmeal and pastries. (If you want something more exciting, skip the breakfast and walk down the green to the bakery Sweet William, for warm rolls and hot coffee.)

There are now more than 25 county magazines, 12 of them part of the same group. If you live in Nottinghamshire, you will have noticed the Nottingham Observer. Its pages are devoted to such things as studio portraits of \"Nottinghamshire Hostesses\" (\"Mrs County Hostess likes skiing and tennis - at her monthly dinner parties, her favourite dish is Syllabub\"). His best gimmick in Nottingham so far has been a three-page spread of a local girl in a very \"topless\" dress touring the city's nightspots. Can these two cities support two such papers? Most people doubt it. Over hock and venison in Nottingham's Chateau de l'Aperitif, Mr [Guy Wayte] told me: \"My circulation here is over three times Ball's. He'll go bust within six months.\" Over gin and tonic in the city's Hippo club, Mr [John Ball] said: \"My circulation here is more than twice Wayte's.\"
