Characterization of vitamin B12 compounds from commercially available fish roe products

Although fish roes (or the egg-laden ovary) are seafood products with high nutritional value and are considered abundant in vitamins including vitamin B12, nevertheless, the detailed properties of vitamin B12 have not been fully elucidated in fish roe products. Vitamin B12 content was determined using C18-reversed-phase high-performance liquid chromatography after purification of samples from immunoaffinity columns. Salmon egg-laden ovary products (sujiko), salmon roe products (ikura), dried mullet roe products (bottarga), and white sturgeon roe products (caviar) were found to contain substantial levels of vitamin B12 (more than approximately 15 µg/100 g wet weight). Interestingly, high levels of vitamin B12 per 100 g wet weight have been measured in pollack roe products (tarako) and flying fish roe products (tobiko). Liquid chromatography–electrospray-ionization/tandem mass spectrometry analysis revealed that vitamin B12 was the predominant corrinoid in the evaluated fish roe products examined, while no inactive corrinoid compounds were identified. These results suggest that commercially available fish roe products could be an important source of vitamin B12 for use as a dietary product for humans.

Safety evaluation of salmon muscle consumption in patients with salmon roe allergy

The β′-component, a major allergen found in fish roe, is synthesized in the liver of female fish as part of the precursor of the egg yolk protein vitellogenin (Vg). Vg is distributed through the bloodstream and contributes to ovary development. In the present study, β′-component, present in Vg fragments, was detected in the muscles and internal organs of mature female salmon, with concentrations exceeding the recommended labeling level under Japan's food allergy labeling system. Additionally, total protein extracted from tissues of female salmon reacted with immunoglobulin E antibody against the salmon roe β′-component. No β′-component was detected in the tissues of mature male fish in the absence of sex hormone stimulation from females nor in immature salmon without sexual differentiation, but excess stimulation of the female sex hormone induced Vg synthesis containing the β′-component in the male fish. These findings suggest that taking into account fish sex, maturity, and sexual isolation of mature male fish could improve the safety of salmon meat for individuals with salmon roe allergy.

Characterization of fish sausage manufactured with combination of sunflower oil and fish oil stabilized with fish roe protein hydrolysates

The present study aimed to determine the effect of adding protein hydrolysates obtained after 30, 60, and 90 min enzymatic hydrolysis of fish roe on properties of silver carp sausages enriched with fish oil during storage at 4 °C for 30 days. Properties of the fortified sausages were determined by assessment of primary and secondary oxidation, fatty acid composition, microbial spoilage, texture, and organoleptic properties. The results indicated that the hydrolysates could retard oil oxidation and microbial spoilage and preserve n− 3 fatty acids in fish sausages during the refrigerated storage. Also, they rendered firmer microstructure with smaller oil droplets to the sausages. Fish sausages fortified with the hydrolysates were lighter and exhibited better textural and sensory properties. It can be concluded that enzymatic hydrolysates from discarded fish roe can be added to fish sausages containing fish oil to retard oil oxidation and microbial spoilage and improve sausage properties.

In the current study contents of As, Cd, Cu, Co, Pb, and Sn were determined in the caviar of Persian sturgeon collected from Southern Caspian Sea sampling site. After acid digestion of caviar specimens, the concentrations of elements determined using ICP-OES. The results showed that the mean concentrations (mg kg
−1
) of elements in caviar samples were 0.01 for As, 0.05 for Cd, 1.42 for Cu, 0.01 for Co, 0.01 for Pb, and 0.28 for Sn and for all the elements are significantly lower than the adverse level for the human consumption. Also, health risk index (HRI) values were within the safe limits (HRI < 1). Therefore, there is no potential health risk to adults and children via consumption of caviar. Due to the discharge of hazardous chemicals into the marine ecosystems especially the Caspian Sea, residue analysis of pollutants in the sea foods is recommended.

Seafood alternatives: assessing the nutritional profile of products sold in the global market

The global market for seafood alternatives is witnessing an exponential growth. Nevertheless, the nutritional quality of such products is scarcely studied. Thus, this study aimed to evaluate, for the first time, the nutritional quality of seafood alternatives launched in the global market from 2002 to 2021 and to compare them with the conventional seafood products. Using the Mintel Global New Products Database, the nutritional information of seafood alternatives (i.e., tuna, shrimps, calamari, fish fingers, fish sticks, salmon, caviar, and fillet) was retrieved, and compared with conventional products. A total of 149 seafood alternatives were identified, of which 83 items had complete mandatory nutritional labeling. Conventional products (n = 973) were also collected, from which 130 products have a complete nutritional labeling. Results revealed that tuna, shrimps, caviar and fillet alternatives contained significantly less protein than conventional products, while calamari, fish fingers, fish sticks and salmon alternatives had similar amounts to their conventional counterparts. Salt content was significantly higher in tuna, fish fingers and sticks substitutes, but lower in shrimps, calamari and caviar alternatives compared to conventional products. Overall, the commercially available seafood alternatives have nutritional strengths and some shortcomings to be further addressed in future research such as low protein content. Additionally, fortification of seafood alternatives with micronutrients, such as omega-3 fatty acids and vitamins (A, B, and D), should be considered to ensure a nutritional equivalence with the conventional products.

GC–MS-based metabolome classification of sturgeon caviar and fish roe samples reveals unique caviar signatures, interspecies and gender variabilities

Caviar/roe, widely valued in modern cuisine, is little characterized regarding its complete metabolite composition. Existing studies focused primarily on specific classes e.g., lipids and proteins. This study represents the first extensive GC–MS metabolite profiling of 48 caviar/roe samples from 10 commercially important taxa, including male and female aquatic animals. One hundred thirty-nine primary and secondary metabolites were identified and quantified belonging to fatty, amino, and organic acids, sugars, nitrogenous compounds, and steroids/terpenoids. Multivariate data analysis further uncovered clear interspecies and gender-specific metabolic differences. OPLS-DA highlighted palmitic acid and cholesterol as discriminative markers for sturgeon caviar, while serine and urea distinguished salmon roe. Gender differences were evident in

Present and future sturgeon and caviar production and marketing: A global market overview

Summary Continuous drastic declines in natural sturgeon populations over the past 30 years plus a high market demand for caviar have led the way for sturgeon farming, mainly for the production of caviar. Russia, Iran, members of the European Union, China and the USA were among the first; however, for the very same reasons countries outside the natural range of sturgeons also became involved (e.g. Uruguay, Arabian countries, Israel, and more recently Vietnam). At present (2012), the total caviar output from aquaculture is estimated at 260 tonnes, a production that could increase to 500–750 t within the next 10 years. If these figures are realistic, the future of caviar trade will be determined mainly by demand‐driven price structures, with the appearance of a new and evolving ‘mass market’ in addition to the traditional luxury high‐priced market. Other issues are the uncertainties and opportunities in the market place. All of these issues indicate that this relatively new branch of the aquaculture industry faces similar growing pains as in previous developments (e.g. salmon farming) but within a shorter time frame. The same drive that gave the incentive to farm sturgeons also provided, since the early 1970s, the incentives to seek alternative products that could fill the void in caviar supplies and even create new market sectors. The various products currently found on the market have been divided into six categories: (a) true caviar (using eggs from sturgeons); (b) substitute caviar (eggs derived from other fish species or from other animals); (c) imitation caviar (caviar‐like products constructed from other biological substances, imitating caviar in appearance and taste); (d) simulated caviar (produced by other biological substances to simulate only the taste of caviar, but not the appearance); (e) derivates (products that contain true caviar as a recipe component); (f) products with emotional associations to caviar (not related to caviar at all, but use the name as a marketing strategy to evoke a luxury image and infer a high value). At present, the eggs of more than 38 species of fish, besides sturgeons, and three species of other animals are used to produce substitutes. About 15 ‘caviar‐like’ preparations are used as raw materials – such as fish flesh, seaweed, and others mixtures. Five products can be considered simulations; few use caviar as a component in their production recipes. A variety of objects (unrelated to caviar) are currently marketed, but use ‘caviar’ in their trademark.

The genus Caulerpa is highly diverse, especially in the Caribbean Sea, the Indo-Malay archipelago and the temperate waters of southern Australia. Currently, more than 100 species are recognized worldwide. Despite recent advances in taxonomy and phylogeny, there is still confusion about the delimitation and identification of some species due to tremendous phenotypic plasticity. Caulerpa is known to occupy a wide range of environmental niches and to have great invasive potential. More studies are necessary to understand better the ecology (invasiveness, the functional role of its microbiome) and the biology (reproduction, life cycle, and metabolism) of Caulerpa species, especially for economical species. Very few species, mainly C. lentillifera and C. racemosa known as green caviar, have been cultivated. Caulerpa is consumed mostly in Asia and Oceania, but its popularity tends to be on the increase in western countries with new nutritional practices (vegetarians, vegans, health foods). Being naturally enriched in essential nutrients and various health-promoting compounds, Caulerpa species are promising candidates for the design of functional foods and in the health and well-being sectors. The diversity of Caulerpa offers a remarkable potential for valorization with innovation opportunities. Caulerpa farming can bring significant economic and environmental (e.g., bioremediation, blue carbon pump) benefits if these farms are established in a sustainable approach.

Comparison of the Effect of Phospholipid Extracts from Salmon and Silver Carp Heads on High-Fat-Diet-Induced Metabolic Syndrome in C57BL/6J Mice

Metabolic syndrome (MetS) is a global health problem, and EPA/DHA-enriched phospholipids (EPA/DHA-PLs) have been found to have positive effects on MetS improvement. Currently, research on EPA/DHA-PL mainly focuses on special and rare seafood, such as phospholipids derived from krill, sea cucumber, squid, and fish roe. However, it has been recently demonstrated that abundant EPA/DHA-PL can also be found in bulk fish and its by-products. Nonetheless, there is still limited research on the biological activities of EPA/DHA-PL derived from these sources. The aim of this study was to investigate the effect of phospholipid extracts from the heads of salmon and silver carp (S-PLE and SC-PLE) on the high-fat-diet-induced MetS in C57/BL mice. After an 8-week intervention, both SC-PLE and S-PLE had a significant ameliorating effect on MetS. Moreover, SC-PLE was more effective than S-PLE in reducing liver inflammation and fasting glucose. Both of the PL extracts were able to regulate the expression of key genes in lipid synthesis, fatty acid β-oxidation, and insulin signaling pathways. Compared with S-PLE, dietary SC-PLE had a greater influence on liver metabolomics. Pathway enrichment analysis showed that the differential metabolites of SC-PLE were mainly involved in arachidonic acid metabolism and glutathione metabolism. The results indicated that the different metabolic regulation methods of S-PLE and SC-PLE could be related to their variant molecular composition in EPA/DHA-PL.

A Repetitive Acipenser gueldenstaedtii Genomic Region Aligning with the Acipenser baerii IGLV Gene Cluster Suggests a Role as a Transcription Termination Element Across Several Sturgeon Species

This study focuses on the common presence of repetitive sequences within the sturgeon genome that may contribute to enhanced immune responses against infectious diseases. A repetitive 675 bp VAC-2M sequence in Russian sturgeon DNA that aligns with the Siberian sturgeon IGLV gene cluster was identified. A specific 218 bp long portion of the sequence was found to be identical between Acipenser gueldenstaedtii, A. baerii and A. stellatus species, and NCBI blast analysis confirmed the presence of this DNA segment in the A. ruthenus genome. Multiple mutated copies of the same genomic region were detected by PCR analysis, indicating that different versions of this highly repetitive sequence exist simultaneously within the same organism. The selection toward specific genetic differences appears to be highly conserved based on the sequence variations within DNA originating from fish grown at distant geographical regions and individual caviar grains from the same fish. The corresponding A. baerii genomic region encompassing the 357 bp DNA sequence was cloned either ahead or after the human cytomegalovirus immediate early promoter (HCMV-IE) into a pBV-Luc reporter vector expressing the luciferase gene. The DNA segment significantly reduced luciferase expression in transient transfection/expression experiments. The results indicate that this genomic region functions as a transcription termination element that may affect antibody production in sturgeons.
