Exploring Food Safety Perceptions and Self-Reported Practices of Pet Owners Providing Raw Meat–Based Diets to Pets

The growing popularity of raw meat-based diets for pets is accompanied by increasing concern regarding possible health implications of this practice for pet owners through the storage and preparation of raw meat. This study aimed to explore pet owners' knowledge and perceptions about the safety of raw meat-based feeding and to determine self-reported food safety practices during raw meat-based pet food preparation. An online questionnaire was distributed via social media platforms and completed by pet owners practicing raw meat-based feeding (n = 174). Almost all participants (95%) reported confidence that their pets' raw meat-based food is safe. Two-thirds of respondents (67%) reported that they had researched food safety information regarding raw meat-based feeding, yet only 8% asked a veterinarian for food safety advice. Respondents were aware of pathogens that may be present in raw meat-based diets and of food safety practices; however, they did not report consistent implementation of appropriate food safety practices. Malpractices, such as rinsing of raw meat (27%) and absence of segregation of utensils and kitchen surfaces (52%), were reported. The risk to pet owners of foodborne illness associated with raw meat-based feeding was perceived to be low by 89% of pet owners. Participants perceived low susceptibility to foodborne illness but high self-efficacy, which may be an indication of optimistic bias. This study has identified a need to increase pet owners' awareness of the possible risks to human health associated with raw meat-based feeding of animals. The provision of comprehensive food safety information, intended to target the perceptions of pet owners identified in this study, is needed to improve pet owners' food safety practices and thus to reduce the potential food safety risks associated with raw meat preparation and storage in the domestic environment.

A Meta-Analysis of the Global Prevalence Rates of Staphylococcus aureus and Methicillin-Resistant S. aureus Contamination of Different Raw Meat Products

Previous research has indicated that raw meats are frequently contaminated with Staphylococcus aureus, but data regarding the pooled prevalence rates of S. aureus and methicillin-resistant S. aureus (MRSA) contamination in different types of raw meat products (beef, chicken, and pork) and across different periods, regions, and purchase locations remain inconsistent. We systematically searched the PubMed, EMBASE, Ovid, Web of Science, and HighWire databases to identify studies published up to June 2016. The STROBE guidelines were used to assess the quality of the 39 studies included in this meta-analysis. We observed no significant differences in the pooled prevalence rates of S. aureus and MRSA contamination identified in various raw meat products, with overall pooled prevalence rates of 29.2% (95% confidence interval [CI], 22.8 to 35.9%) and 3.2% (95% CI, 1.8 to 4.9%) identified for the two contaminants, respectively. In the subgroup analyses, the prevalence of S. aureus contamination in chicken products was highest in Asian studies and significantly decreased over time worldwide. In European studies, the prevalence rates of S. aureus contamination in chicken and pork products were lower than those reported on other continents. The pooled prevalence rates of S. aureus contamination in chicken and pork products and MRSA contamination in beef and pork products were significantly higher in samples collected from retail sources than in samples collected from slaughterhouses and processing plants. These results highlight the need for good hygiene during transportation to and manipulation at retail outlets to reduce the risk of transmission of S. aureus and MRSA from meat products to humans.

Isolation and identification of Helicobacter pylori from raw chicken meat in Dhamar Governorate, Yemen

Although Helicobacter pylori (H. pylori) is one of the most common bacterial pathogens of human, its natural reservoirs are still unclear. There is an increasing number of reports that document the occurrence of H. pylori in various foods. This study aimed at isolation of H. pylori from chicken meat sampled. Two hundred and sixty samples were collected randomly from slaughterhouses and markets in Dhamar Governorate, Yemen. Samples were enriched in Brain-Heart Infusion broth in microaerophilic conditions before inoculating the Camp-Blood agar and EYE agar plates. Results showed that 13.8% of samples were contaminated evidenced by H. pylori growth via traditional culture method on agar media. No significant differences between sample types (thighs and breast muscles) (p=0.353) or the sampling source (p=0.816) were observed. Autumn season was associated with increased occurrence of H. pylori. The source of H. pylori in food is still not identified. Proper cooking and good sanitation practices are highly recommended to avoid the infection. Further studies addressing the potential sources of H. pylori are highly suggested.

Screening of Ready-to-Eat Meat Products for Hepatitis E Virus in Switzerland

Seroprevalence data for pig herds suggested that there must be a relevant reservoir for hepatitis E virus (HEV) in Switzerland. To know more about the viral presence in ready-to-eat meat products, we screened pork liver sausages and raw meat sausages from the Swiss retail market for the presence of HEV. Testing was performed with a detection method where the virus extraction step was optimized. As for the performance of the improved method, the mean recovery rate for the mengovirus process control was 24.4%, whereas for HEV-inoculated sample matrices between 10.4 and 100% were achieved. The limit of detection was about 1.56 × 103 and 1.56 × 102 genome copies per gram for liver sausages and raw meat sausages, respectively. In the screening programme, HEV-RNA was detected in 10 of total 90 (11.1%) meat products, 7 of 37 (18.9%) liver sausages, and 3 of 53 (5.7%) raw meat sausages. Virus loads of up to 5.54 log10 HEV genome copies per gram were measured. All sequences retrieved from positive samples belonged to HEV genotype 3. The significance of the presented work was a current overview of the HEV prevalence in ready-to-eat meat products on the Swiss retail marked and an improvement of the extraction efficiency of the HEV detection method.

Risk perception and food safety practices among Slovenian pet owners: does raw meat feeding of pets make a difference?

Commercially produced and home-made raw meat-based pet diets are becoming increasingly popular and have been recognised as an emerging public health risk by the European Food Safety Authority. The aim of this study was to investigate risk perceptions and self-reported pet food preparation practices in the home setting among pet owners who feed raw meat-based diet to pets. An online questionnaire was distributed to pet owners through social media groups. Ultimately, 750 respondents were included in the detailed analysis, divided into two subgroups, a “raw group” consisted of pet owners who provided raw meat-based diets for pets (
n
= 382), while the “conventional group” consisted of pet owners who did not (
n
= 368). There was no significant difference between the two groups in overall risk perception. Only one third of respondents in both groups were aware of the potentially fatal consequences of food poisoning. Self-reported frequency of hand washing, and surface cleaning, were significantly higher (
p
= 0.000) in the raw group than the conventional group. Food safety malpractices were noted in the raw feeding group, with 47% reporting to rinsing raw peat meat before preparing it, and 42% thawing frozen raw peat meat at room temperature on the kitchen counter. The results provide information on the prevalence of feeding raw meat to pets among Slovenian pet owners and provides the basis for developing tailored food safety education campaigns to improve risk awareness and provide food safety recommendations for pet owners providing raw meat-based diets for pets in Slovenia.

Anti‐microbial resistance of Salmonella isolates from raw meat‐based dog food in Japan

Background Salmonella contamination of raw meat‐based diets (RMBDs) for pets poses a major public health concern but has not been investigated in Japan. Objective To investigate Salmonella contamination in RMBDs for dogs marketed in Japan and the anti‐microbial resistance profiles of the Salmonella isolates. Methods Sixty commercial RMBD samples were collected in the Okayama and Osaka Prefectures, Japan, between December 2016 and March 2017. The obtained Salmonella isolates were serotyped, their anti‐microbial resistance patterns were determined, and the anti‐microbial‐resistant isolates were screened for the presence of resistance genes by polymerase chain reaction. Results Salmonella enterica subsp. enterica was detected in seven of the 60 RMBD samples. Among them, five isolates were identified as S. Infantis (n = 3), S. Typhimurium (n = 1) and S. Schwarzengrund (n = 1), while the serotypes of two isolates were unable to be identified. All isolates were susceptible to ampicillin, cefazolin, cefotaxime and gentamycin. Two isolates were resistant to more than one anti‐microbial agent; one of the S. Infantis isolates was resistant to streptomycin, kanamycin, tetracycline and trimethoprim, while the S. Typhimurium isolate was resistant to nalidixic acid, ciprofloxacin and chloramphenicol. The S. Schwarzengrund isolate was resistant to tetracycline. Additionally, the S. Typhimurium isolate harboured the anti‐microbial resistance gene gyrA with a mutation corresponding to Ser‐83→Phe amino acid substitution. Conclusion The study findings suggest that RMBDs for dogs marketed in Japan can be a potential source of Salmonella infection for dogs and humans including infections caused by quinolone‐resistant isolates. The current study's objective was to determine the prevalence of Salmonella contamination in RMBD for dogs and the antimicrobial resistance profiles of these isolates. Therefore, the incidence of Salmonella contamination in RMBD for dogs currently sold in Japan was surveyed. Salmonella was detected in seven of the 60 raw food samples.

Impact of Chilling Rate on the Evolution of Volatile and Non-Volatile Compounds in Raw Lamb Meat during Refrigeration

The aim of this study was to investigate the effect of chilling rate (1.44, 22.2, and 32.4 °C/h) on the evolution of volatile and non-volatile compounds in raw lamb meat during refrigeration (1, 24, 72, and 120 h). Through orthogonal projection to latent structure-discriminant analysis, the calculation of odor activity values (OAV > 1) and taste activity values (TAV > 1) analysis, 1-octen-3-ol, (E, E)-2,4-decadienal, nonanal, hexanal, nona-3,5-dien-2-one, 2,3-octanedione, hexanoic acid, 1-nonen-4-ol, aspartate (Asp), Glutamic Acid (Glu), 5′-GMP, 5′-IMP, and 5′-AMP were regarded as differential flavor or taste compounds for raw meat undergone different chilling rates. With a rapid chilling rate at 24 h after slaughter, the contribution of 1-octen-3-ol decreased, but (E, E)-2,4-decadienal increased. Moreover, at 24 h post-mortem, the equivalent umami concentration of Asp, Glu, 5′-GMP, 5′-IMP and 5′-AMP in raw meat were significantly lower at a chilling rate of 1.44 °C/h than 32.4 °C/h (p < 0.05). Conclusively, under the rapid chilling rate, more fatty odor and umami compounds accumulated in 24 h aged meat.

Quality Assessment of Fresh Meat from Several Species Based on Free Amino Acid and Biogenic Amine Contents during Chilled Storage

This paper studies the changes that occur in free amino acid and biogenic amine contents of raw meats (beef, pork, lamb, chicken and turkey) during storage (2 °C, 10 days). The meat cuts samples were harvested from a retail outlet (without getting information on the animals involved) as the following: Beef leg (four muscles), pork leg (five muscles), lamb leg (seven muscles), turkey leg (four muscles), and chicken breast (one muscle). Meat composition varied according to meat types. In general, pH, microbiology counts, biogenic amine (BA), and free amino acid (FAA) contents were also affected by meat types and storage time (p < 0.05). Chicken and turkey presented the highest levels (p < 0.05) of FAAs. Total free amino acids (TFAA) were higher (p < 0.05) in white meats than in red ones. The behavior pattern, of the total free amino acids precursors (TFAAP) of Bas, was saw-toothed, mainly in chicken and turkey meat during storage, which limits their use as quality indexes. Spermidine and spermine contents were initially different among the meats. Putrescine was the most prevalent BA (p < 0.05) irrespective of species. In general, chicken and turkey contained the highest (p < 0.05) levels of BAs, and TFAAP of BAs. In terms of the biogenic amine index (BAI), the quality of chicken was the worst while beef meat was the only sample whose quality remained acceptable through the study. This BAI seems to be more suitable as a quality index for white meat freshness than for red meat, especially for beef.

Zoonotic bacteria and parasites found in raw meat-based diets for cats and dogs

Feeding raw meat-based diets (RMBDs) to companion animals has become increasingly popular. Since these diets may be contaminated with bacteria and parasites, they may pose a risk to both animal and human health. The purpose of this study was to test for the presence of zoonotic bacterial and parasitic pathogens in Dutch commercial RMBDs. We analysed 35 commercial frozen RMBDs from eight different brands. Escherichia coli serotype O157:H7 was isolated from eight products (23 per cent) and extended-spectrum beta-lactamases-producing E coli was found in 28 products (80 per cent). Listeria monocytogenes was present in 19 products (54 per cent), other Listeria species in 15 products (43 per cent) and Salmonella species in seven products (20 per cent). Concerning parasites, four products (11 per cent) contained Sarcocystis cruzi and another four (11 per cent) S tenella. In two products (6 per cent) Toxoplasma gondii was found. The results of this study demonstrate the presence of potential zoonotic pathogens in frozen RMBDs that may be a possible source of bacterial infections in pet animals and if transmitted pose a risk for human beings. If non-frozen meat is fed, parasitic infections are also possible. Pet owners should therefore be informed about the risks associated with feeding their animals RMBDs.

Carrageenan/Alginate-Based Functional Films Incorporated with Allium sativum Carbon Dots for UV-Barrier Food Packaging

Hydrothermally prepared garlic (Allium sativum) cloves-derived carbon dots (CDs) were used to fabricate carrageenan/sodium alginate (Car/Alg)-based functional films for UV-barrier food packaging. The effects of different concentrations of CDs on the films’ structural, functional, physical, and mechanical properties were analyzed. The CDs acted as a reinforcing agent to improve the films’ mechanical stability and surface hydrophobicity. The structural characterization indicated good compatibility between CDs and the Car/Alg polymer matrix. The functional films showed a significant bacteriostatic effect against foodborne pathogenic bacteria E. coli and L. monocytogenes. Besides, they exhibited excellent UV-blocking properties (~ 85.1% in the UV-A and 99.0% in the UV-B). In addition, CD-incorporated Car/Alg films showed high antioxidant activity as determined by ABTS (98.6 ± 0.3%) and DPPH (34.2 ± 0.3%) free radical scavenging methods. When used for UV protection packaging of raw meat, the functional film could preserve the meat color even when directly exposed to UV light for 30 h. The results indicate the potential of CD-containing Car/Alg-based films for active food packaging applications, especially as UV-blocking films for preserving the visual quality of meat products.
