يطمح هذا الكتاب إلى تقديم نظرية جديدة أثارت اهتماما كبيرا، تسمى \"فرضية الطهي\"، وهو يؤسس بها لفكرتين أساسيتين: الأولى أن الطهي والانتقال من تناول الطعام النيء إلى الطعام المطبوخ هو السبب في تطور الإنسان من حالة الرئيسات من غير البشر إلى مرحلة الإنسان العاقل، والثانية أن الطهي أطلق في الطعام طاقة إضافية ساعدت على تقليص حجم الجهاز الهضمي، وزيادة نمو الدماغ، وأتاحت للإنسان وقتا إضافيا يكرسه للصيد، وبناء علاقات جديدة، ويرد رانغهام بهذه النظرية على نظرية دارون في النشوء والتطور، وعلى المفهوم الذي طرحه كلود ليفي شتراوس عن النيء والمطبوخ.
