وجود مدينة تطوان على ضفة المتوسط جعلها تاريخيا بوابة لعدة روافد ثقافية أسهمت في تشكيل هويتها المتعددة الأصول، والمتفاعلة مع تيارات حضارية امتزجت بالسمات الأوربية والعربية، والأفريقية والأمازيغية. هذا التميز سيتمظهر مع تحولات التاريخ في عدة ميادين أبدع فيها التطواني وحرص عبرها على بناء ثقافته التي تحمل في طياتها سلوكات وذهنيات ذات دلالات ومعاني تتباين وتتقاطع في الرؤى للمجال والإنسان. والغذاء وحرف وفنون الطبخ التي تميز التطواني هو حصيلة تراكمات ثقافية تبرز مدى تجذره في عمق التاريخ، ويكشف لنا من تعدد ألوانه وأشكاله كيف أسهمت مختلف الفئات الاجتماعية في إنتاجه، بل من خلال الأطعمة والأشربة الأصيلة منها والذخيلة، يمكن فهم بنية المجتمع، ونمط الاقتصاد، ومجموع القيم. هذا ما تختزله المقولة الألمانية الشهيرة \"قل لي ماذا تأكل، أقول لك من أنت ((Dis-moi ce que tu manges je te dirai qui tu es).
