Overview
This paper explores the translation of food-related cultural references (FCRs) from spoken English into Arabic sub- titles based on analysis of a corpus-driven mixed-method of 90 Hollywood films. Using the AVT-Food Corpus90, a 1.4-million-word English-Arabic parallel corpus, the study examines how subtitlers work to balance foreignization and domestication in the process of translating culturally specific food items. The results reveal that the most popular strategy is that which relies on foreignization through transference (29.8%), followed by literal translation (25.1%) and intratextual glosses (15.4%), creating a new trend in Arabic subtitling that promotes cultural visibility and creates intercultural interaction. However, domestication remains necessary, and generalization (29%) is commonly used, particularly to address shortages of space, intensive brain processing requirements, and the audience's lack of awareness. More selective strategies, including cultural substitution and omission (both seen at only 0.4% percent occurrence), are used infrequently, mainly to handle religious sensitivities and differing sociocultural standards. Based on this analysis, subtitling offers a mixed form of cultural mediation, and the decisions made by translators can be highly subtle, dependent on context and influenced by audiovisual limitations and genre and viewer requirements. This study presents new perspectives on audiovisual translation in the Arab World by concentrating on FCRs, a rich field of cultural connotation and visual imagery that has been under-researched in this area thus far. It also redefines subtitlers' roles as stretching beyond acting solely as language facilitators, seeing them as culturally responsive actors who negotiate the flow of meaning across the world by applying the lenses of cuisine, identity, and screen media.
