ذلك الكتاب الذي يعد بحق إضافة هامة إلى المكتبة العربية، يحتوي كتاب \"الكيمياء الحياتية التطبيقية\" فصولا أربعة أولها : يتناول الفيتامينات والتميمات الأنزيمية ويعنى بتصنيفها وتخليقها وخصائصها ودورها الحيوي وإنتشارها وأهميتها في تغذية الإنسان، أما الفصل الثاني : فيختص بالأنزيمات من حيث إكتشافها وخصائصها العامة وتسميتها النظامية وأهميتها في علم الأغذية. كما يتناول هذا الفصل أهم الأنزيمات في علم الأغذية وفي الصناعة من حيث تفاصيل التفاعلات التي تحفزها بما في ذلك آليات التحفيز وحركيات التفاعل، أما الفصل الثالث فيتناول أنواع الإختمار في الكائنات المجهرية والظروف الملائمة للإنتاج الصناعي لبعض نواتج الإختمار مع توضيح لآليات التفاعلات أينما أمكن ذلك، والفصل الرابع : يخص موضوع الشحوم ومواد الإستحلاب تركيبها وآلية عملها.
