كانت فكرة هذه الموسوعة نتيجة لما نشاهده من سلبيات عديدة في مفاهيمنا للغذاء في مزارعنا وفي بيوتنا وفي المطاعم وفي الفنادق وفي المصانع. هذه السلبيات لم يتناولها أي مؤلف في التثقيف والتوعية رغم دخولنا القرن الواحد والعشرين بل نجد أن عملية التعليم أصبحت عملية روتينية تتناول الأساسيات وتركت الكثير من الخصوصيات كما أن أكثر المراجع العلمية في الغذاء والتغذية أصبحت في واد والمجتمع في واد آخر وأن عملية الاجترار في تأليف الكتب ومع الأسف الشديد أصبح ظاهرة غير صحية والمسؤول عنها هو عدم وجود الرقابة وكذلك التحكيم قبل عملية النشر وقد ساعد هذا الاتجاه دور النشر التي أصبح همها الأساسي هو الربح السريع على حساب المواطن.
